Ok, we confess. We don't measure
anything. Hildy's grandmother used to say, "Look and see. If it needs more,
you'll know, and you'll add more." Dimitri's mom grew up in the hills of Greece
without running water or electricity, so measuring was not a priority. Julia
Child used to say, "Never measure good ingredients," but then again, she was
usually saying that about wine. And so we can only tell you to do what we
learned from them. Experiment a lot. When you have great ingredients, use them
to taste. Taste often as you cook. And please be forgiving of us as recipe
writers, because obviously, we are not. We're just simple consultants who
happen to like to cook! |
