Dyan's Tiramisu Parfait

This is one of the most
delightful things to hit your tongue. And of course, it has a
story.
Dyan is the Dessert Queen. as good a cook as Dimitri is, his
expertise ends with the main course. Which is where Dyan picks up. What a
team!
In
trying to put together the good parts of three different tiramisu recipes, Dyan
wasn't satisfied with the consistency of the end result. And so she whipped it
quickly in the blender and froze it.
Because it's not blended completely to
liquid, small chunks of lady finger are little treats inside the treat. Topped
with whipped cream and a dash of cinnamon, a sprinkle of kahlua - oh this is TO
DIE FOR!

| Syrup: |

| 1 cup very strong coffee or espresso |

| Filling: |

| 2 Tablespoons granulated sugar |
|

| 8 ½ ounces marscapone cheese |
|
| ° |
| 4 egg whites - pinch of salt |
|
| ° |

| 3 cups heavy whipping cream |
|
| ° |

| ° |

| ° |
| cinnamon or espresso powder for dusting |

Preparation: 1. In a bowl combine coffee, espresso and sugar and set
aside
2. In a separate mixing bowl, combine the egg yolks and
sugar. Beat until pale and yellow colored. Add marscapone and mix until smooth.
Add 3 tbsp Kahlua
3. In yet another mixing
bowl, beat egg whites/pinch of salt to stiff peaks. Fold egg whites into cream
until incorporated.
4. And now, in a 4th mixing bowl, whip the cream with 3
tbs Kahlua until soft peaks form. Fold in ½ cream mixture into
marscapone mixture.
5. Drizzle lady fingers with syrup.
6. Working in
divided portions, mix cookies and cheese filling in food processor until well
blended but still chunky. Fill parfait glasses - starting with cheese mixture,
layering whipped cream alternately. Sprinkle cinnamon and espresso on each
whipped cream layer. Finish with whip cream on top - sprinkle topping and put
in freezer for at least 2 hours. |
